I doubt the server crash had any bearing on the problem, unless they corrupted a file somehow.

That being the case - what would you suggest I do now? Do you think re-installing will correct the issue? If there is a corrupt file - is there any particular file/s you are aware of that I could try reuploading to the server?

I wouldn't re-install, your best bet is going to be to open a ticket with X-Cart and have them diagnose it for you. They can probably find the issue in 10 minutes.
