I have different suppliers who use different shipping rates and methods. Is there any way or addon that I can use to assign different rates to different classes, or categories of products. I know how to set up custom rates, but I can't assign specific rates to specific products.

There is no such thing in XC. If you need it it has to be custom coded.
I did a custom module for a client not long ago for suppliers and having different order fee or tax calculation for each one. Products can be assigned to each suppliers as well as the other way around - supplier assigned to products.
