How do I add brand and model to my products?

I noticed in the X-cart_Alpha_manual_Nov4.zip file it says you can include them.

Importing and Exporting List of Products

brand - Product brand (you can include it in your templates)
model - Product model (you can include it in your templates)

I have version 3.2.1 Gold.

Also where do I find the reference to the separator :: in the top of the center pages?
I want to modify this with perhaps > or an image

you should use the global product options if you wanted to add this to all your products.

If not go to one of your products and choose modify then scroll down the page and look for product options.

I'm still a little confused

Will this work when Importing and exporting products from/to a csv file using the default Column order? When importing products I can see brand and model already included in the Column order selection without adding a brand and model global product option.
