Default Change email font family
I can't find how to change the font in the emails.

Any one know which file to alter?

All of the email templates are in skin1/mail/html, start there

Stumbled over it this morning: mail/html/html_message_template.tpl

That's one issue solved . . . . now for the rest . . . .
