I have been searching for this solution and I have not found anything yet. I have over 1000 categories and sub-categories I have probably 80% disabled until I am ready to use them.

My question is once I create a product and under classification I can choose the main category and additional categories. I there a way to not show the disabled categories in this list? I have so many that I gets confusing which ones are live and which ones are disabled?

You can try to edit the template that shows categories list and throw an if statement to show only category.avail=Y
