Many of my category names go beyond the short line on the left side of each page. Is there a way to make them a bulleted list so categories don't get confused? The multiple lines make it appear as if there are more categories than there really are.

You could also separate them with a horizontal line, often looks quite effective, depending on your design.

Just add an[*] tag in the appropriate place in categories.tpl

Thanks for the tip! Now, one more question... is there a way to show the number of items in a given category on that list?

You could try stealing the code form subcategories.tpl that does just that.
