How would I disable the default contact us form to create and use a static contact us page?

you could just change where the links on the templates go. I am not 100% on everywhere there are links to the built-in contact page, like bottom.tpl, the speed bar...I am sure there is a link in one of the leftbar tpls. use webmaster mode to find them all if you are having problems.

The easiest one to change is the speedbar link: admin/speed_bar.php and just paste your static page in there for the Contact Us link.

Then just paste your form on the static, get a working form handler (like forms-to-go) and you are set.
