The order notifications I get are sometimes come from my own store owner email address or sometimes from the customers' email addresses. I want to set it so that the notifications to me for every order that is placed will come to me from the customer's email address who placed it. I got 4.0.16 running.

Try playing with the e-mail options....I believe the intitial order notification comes from your admin address, while the order processed message comes from the customer address. You'd need to test that out though to see which is which.
