I cannot figure out how to create a customer list, including all account information as well as e-mail from my users. There does not appear to be an export of any type. Perhaps it is in a separate module.

Go to Catalog -> Export page and tick the "Customers" checkbox before exporting data.
This will create a "customers-[YOUR_DATE].csv" file with information on your customers.
