For something like this your best bet is the forum here.
Also the XC help/developer guide if you are ok with code.
Other than that you can hire someone local to you to give you some training in person.

Generally, my approach is to give brief overview of how X-Cart 5 works and then we start working on tasks client wants to accomplish. This way you learn X-Cart not on dummy examples, but on real-world projects.

By the way, we are ready to offer 5 training sessions to all X-Cart resellers free of charge. If you are not reseller, but want to get some training, please contact us via sales@x-cart.com and we will discuss what can be done.
