I found in the manual on page 326 an explanation that customer/main/cart.tpl is the "template that controls the main shopping cart structure page." I went to it and found a file full of tables. I'm sure this is from the skin current on our site, but I've looked at the page source for this, and it's tableless.

I'm confused. I'm looking to move a few elements now on the header (which file I've found) to the menu sidebar and am trying to find which file controls what's in the menu sidebar.

If you are using Fast Lane Checkout, that has its own set of templates for the cart area. They are in Skin1/modules/Fast_Lane_Checkout. FYI, webmaster mode will always tell you exactly which template is which
