It it possible to use CSS only to widen the sku column on the admin view of the items listed upon product search?

Seems like it would be, CSS is what controls such things usually.

However to do so you need a module created for your store, that adds CSS to the admin panel. The Custom CSS that exists by default only affects the customer side.

Once you have your module and CSS sheet loading though, you can do anything you want to the admin with it.
