Change visible categories in admin from 100 to 200

Default Change visible categories in admin from 100 to 200
How can I change the number of visible categories in admin to 200.
The preset count only goes to 100 and I have 135 categories.
This makes it hard to alphabetize them.

Also why does the software not put the sub categories in alphabetical order as default.
