Default Inventory Tracking

I have a combination of high end products for which I do not have an "instock" qty, as well as alot of accessories for which I have daily inventory qty updates.

Both "Show Qty In Stock" and "Inventory Tracking" must be active, and of course if the qty is 0 then "buy now" is disabled.

I need to be able to show the Qty instock if the value is greater than 0, and if Qty is 0 keep the 'buy now' function active, and not display an out of stock label.

Can't figure out fhow to make this change. There are references to {$product.avail} in both the main/proct.tpl and the buy now.tpl.

Why not just give it a value, like for example 1000 ? This way you not only remain activated, you control inventory output (even though it is not inventorable) and your prospects say "Hey, this guy really handles a lot of products, he has to be good".
