Default Email and Removing Xcart doohicky
Does anyone know which file to modify to remove the "Thanks you for using Xcart system" that goes out with all emails? I am pretty sure it's in one place...I just can't seem to find that one place...

What version are you using? You may want to look in the Language files.

Default Removing or Editing Signature Line for Order Notification
If you go to: /mail/signature.tpl and remove: {$lng.eml_signature} this will take out the text. But you may wish to have a signature. In that case I would go to the Languages in admin mode Select Edit (choose your language), then Select topic: E-mail. If click on the link to go to page 2 you'll find eml_signature. You can edit the text from "Thank you for using
X-Cart shopping system" to whatever you want.
