Where is the Buy Now button?

in 3.5.7? Is this a .gif file?

It is /skin1/buttons/button.tpl

The buttons are built in 3 parts...

Left part is but1.gif
Center is just a class with a background with the text (go, buy now, etc...)
Right part is but2.gif

Well I thought I had this, where do you edit the text and the background color where the text rests (the middle section)?

Well, the but1 and but2.gif's are the 2 rounded corners of the buttons.
The center part background is changed by editing the CSS file.
The class name is "Button".
The text is dinamic, meaning it changes depending on the variables (e.g. go, buy now, checkout, etc...)

Well I'm in total shock because I'm jumping through a million hoops to change one button. Is the middle "color" this file: butbg.gif ? I've pulled out photoshop and changed both end corners to the color I want, but still have no clue where to change the actual text "Buy Now."

That would in "Admin > Languages"

Variable is "lbl_buy_now"

And Yes, butbg.gif is the file.

You'll also need to change the BG color for the Button class in your CSS file.
