Creating an Order
I feel like in older version I could create an order for a customer?
I need to create an order (or invoice) with products not necessarily in the system so they can check out with the available payment methods. How would I do that in v5?

You can operate as a customer and add all the needed products to the cart + fill all the needed fields. Later, when this customer logs in - he/she will be able to go to checkout and place the order.

I think the key word here is

You can create generic product and add text attribute to it so you can fill out whatever the product description should be at time of adding to cart - that way you can treat this as product not present in the system.
