How is the front page text modified? (ie. in home.php)

The file skin1/customer/main/welcome.tpl does not contain the default front page (home.php) text

The welcome text is a language variable. You can either edit it with Webmaster Mode or via the Languages area. Have a look at the manual, both of these are actually covered pretty well in there.
