Some of our products must be paid for in-store. Is there a way to have certain products still show up on the website with pricing etc., but instead of the "Add to Cart" button, it could say "Must Buy In Store" or something?

Hi there.
You can use the 'Call for price' module for this purpose.
Once it is installed, you will need to update the wording of the button to say something like 'this can be only bought in-store' which can be easily done by updating the text label.

Call for Price module will not work as it hides pricing.

Oops, my bad.
True, it won't work.
I believe this will require custom code then.
