Is there a way to not display the inventory for a particular product while allowing most others to still display it? I am think about a product like a donation where the customer enters in whatever value they want but inventory would not really apply to this type of product or service.

YOu would need to write an {if} statement in the template that tells X-Cart not to display that bit of code for a particular product. Good tutorial on if statements here:
