How about, if I am right where is is no product because I would of deleted them as they are no longer required in the tidy up, the system would give a 404 error, so why can't I point that to automatically to load the home page.
Remember this time all they would have to do is to choose the make and the model then they have found the product.
I know it's not the correct way but it would solve the problem and not really to much of a hassle for the customer.

I would not do a mass delete... do this one sku at a time.
Or at least the first few.
You are fundamentally changing the structure of your site. You are moving products that used to be merchandised independently, into a more shopper-friendly method.
HOW MANY ACTUAL SKUS do you sell?
The goal for your 301s is so google and search engines know where the product lives NOW. DO NOT send your customer on a wild goose chase. You will preserve any search juice that you have if you redirect to the actual product. If you redirect to somewhere else, your ranking will disappear.
Think about how you want to buy your products -- not how you thin the cart wants you to sell them.
