It's about time we had a webmaster mode sticky!!!
There are quicker ways if you know but this will be a good starting point for you to learn about XC In admin go to tools webmaster mode. Make sure you allow XC to open a second window. Start webmaster mode and open customer area in a new window. Bring the pop up window to the front and you have a list of templates. The template you are looking for is head.tpl near the bottom. Click this and it will be opened in editor mode. Your xcart adventure begins. In general settings it is usefull to turn off speed up javascript and css as this prevents the files being combined together and it is easier to see which files are loading in firebug or developer mode in Safari. This should give you a good starting point to work most things out for yourself
