is it possible to insert a tracking code into the contact form page?

Sure, just edit the template. Use webmaster mode to determine exactly which one it is for your version/template.

i'm using 2 columns template (allskin).

Is there a file that i have to edit in particular?

Yea, it is the contact template, probably customer/help/contact_us.tpl, but use webmaster mode to make sure.
