I have changed the background colour of my store and i am having problems with the drop boxes

the drop box background is white and so is the body text.

This making all text typed invisable

Is there a way, if so how, to change the font colour only in drop/list boxs and custom field boxs

If you look at your skin1.css file, you'll see the INPUT, TEXTAREA, etc are grouped in with the BODY tag where you set the color. Simply move the form field elements to a new line and assign them their own color. For example:

INPUT, TEXTAREA, SELECT {color: #000000;}

I Know this post is a little old, but if the "printable version" link is colour#000000
as per all links on my clients site, and they want it moved to a part of the site that happens to have a dark almost black background, what do I need to do to change the colour to #FFFFFF.
