how do I e-mail content sent to customer?

Default how do I e-mail content sent to customer?
Hi folks, ok I've searched all over for answers to this but not found it. All these templates are driving me crazy!!!

How do I edit the text included in the e-mails to customers at placement of order and when an order is completed?

The order complete e-mail has a line of text just above the signature 'Thank you for using our shopping system' I cannot find where I edit this.

it is in the language setting eml_signature

the template is /mail/html/signature.tpl
