How to change/add text in pull down menus?

Hi. For the life of me, I can't seem to figure out how to change or add to the pull-down menus. For example, i want to add "Dr." to the customer title pull-down containing "Mr., Mrs., and Ms." Also, since I only sell and ship in the U.S.A., I want to remove all the other countries in that pull-down. If anyone knows how I can access these, I would be most appreciative.

Have a look in config.php

search for

array("Mr.","Mrs.","Ms.");

Add any other titles in there.
