Does anyone know how I would display extra field values in any given area on a web site.

Example, in pre 4.0.x versions it would be something like this

{if $products[product].param00 ne ""}{$products[product].param00}

You and me both. Be sure to use 'and' in your searches, it will help. For example, instead of searching for 'extra fields', search for 'extra and fields'. You'll get a much better set of results.
