I looked and I searched but I did not turn up anything, so I hope this is not redundant.., but I would like to know how to fix the width of the site to say 700 pixels wide? Can it be done, I would like it centered as well.

Is it in the css file? Or one of the customer/... templates?

Just change the table width in rectangle_top.tpl

Thank you very much, now what if I wanted to make the copyright bar and the header area (so both the top and bottom of the pages) to 100%, but the middle to a fixed width? Is that possible?

Yea, just change the width of the table in home.tpl
