I'm trying to change the color of the white padding/margins creating the white around the thumbnails on the grid list views.

The size of the images has no effect and I can't find any css that can modify this.
Any help would be much appreciated!

You can change the background color with the ThemeTweaker module.

Just add the following CSS rule and rebuild the cache (also, you may need to clear the browser cache as well):

#page #content .products div.product-photo
{
  background: #2c2c2c;
}

You should add this in custom CSS

background:#COLOR !important;

}
