I created a series of static pages that I have been using for the home page and main catalog.

The only problem I have is that once a customer is in the dynamic, shopping cart section, when they hit the "Home" button, it takes them to the dynamic home page, not the static one. I can't seem to find out how to change that.

Well that home button will have a link on it in the templates, so you need to find and edit that link to match your new home page.
You could use webmaster mode to find the template, but I expect its in skin1/head.tpl - especially if that button is at the top of the site.
