Basically my admin side in my xcart has went all strange, it only happens in IE, well most of it.

I'm probably asking a stupid question, but does anyone know what could be the cause?

Impossible to tell without looking at the code. Try restoring any templates you have edited in there, particularly the CSS file, with a backup.
