As I am pretty new to x - cart forgive me if this sounds dumb, but anyways I am wondering how you edit the "uneditable" stuff in webmaster mode.

For instance say I pick a template, we'll say the vivid dreams one. It shows AQUAMARINE then online store below it. I try and click on it in webmaster to change it but to no avail. Also tried to "e" edit it in webmaster and no such luck there either.

What you want to edit may be an image. YOu will have to edit the template or css file directly, depending if the image is applied as a background or not

Any idea what template or css file that could be?

The webmaster mode will tell you which template. Use Firbug addon for FF for the css files
