Id like to know how to modify the standard thumbnail size.
Ive tried uploading an image which is bigger than 150X150px but instead of the image uploading in its original form, xcart is making it bigger.
The resolution is really bad too, despite me risizing, cropping and saving it as a high quality Jpeg.
My image size is 270 high by 80 wide.

It would be cool to be able to assign different sized thumbs to different catagories.
Does anything like this exist?

Not really, as the template is an array...each product uses the same template. If you wanted to, you could probably custom code something using {if} statements....
