When you choose a category on the categories list, how can i get a buy now or add to cart button to every product listed on those pages?

Turn on the buy now option in General Settings/Appearance Options

Yes, turn on the buy now option and then open up customer/main/products_t.tpl and comment out anything you don't want to show:
