How Do I change the title tag so it says my company info? as well how do I change the home.php page to reflect my own company text?

Title is in the Languages section of the Admin.
In the Admin: Click Languages, select English (or your language) from the drop down box
in the Select topic drop-down, choose Text and type "title" in the Apply Filter field and click GO
You're looking for txt_site_title - modify there.

Look through this area for the home page text as well. You can also edit the welcome.tpl template file.
