I want to add box where customers can subscribe to my newsletter in the right column. I have seen this on other sites... how do I do this??

You simply have to create a Newslist for people to subscribe to.

Goto News Management under admin and create one, by default it will be "available for subscription"

Think of newslists as categories for news, you can then create messages in these categories, but that isn't necessary to solve your query.

I created the newslist, but it only puts an option in at the checkout page... I want people to be able to sign up for it on the right column.
