Look in "path_to_xcart/skin1/head.tpl"
and
"path_to_xcart/skin1/head_admin.tpl"
and
"path_to_xcart/skin1/head_printable.tpl"
As many of the veterans here will tell you, using
Webmaster mode will truly jumpstart you in learning where all these things are - it can be difficult in the beginning figuring out which file/template has what.
Webmaster mode is a great tool to start with.
