I too have run into these issues but X-Cart is very good about logging out errors. As suggested check your logs and also verify that all file/folder permissions are correct.

It is worth noting that I had the same issue you reported on a machine that had some very aggressive virus scanning/malware programs on it. Obviously that was a corporate machine and once I moved away from that box I never had a problem again.
