I have a similar need Simon, but in my case I sell unique (one-of-a-kind) products and when they are sold I want to keep them viewable for a week or two, but I want to replace the Price with "SOLD".
I am not using the shopping cart yet and have been told to set the "Quantity in stock" to
zero for all products and have
checked the option "Show products which are out of stock" in General Settings.
I have the option "Disable inventory tracking"
unchecked, but I only ever have stock of 1 or 0 for any product, so I don't think it makes any difference whether I have that option checked or not.
