Welcome aboard!
I've always had the same problem with previewing. Not sure why, though.
I just save the template and go back if I want to alter it again.
You might have to refresh to see changes.
It's not a bad idea to make a back-up of the template first!! 
And yes...you can alter just about everything in X-cart.
