You need to delete the dingbats code from each respective template, e.g. skin1/customer/categories.tpl and remove this
dingbats="dingbats_categorie.gif"
from the last line.
Or just remove the img code from skin1/menu.tpl if you want to remove all dingbats.
To help you find the right templates, use Webmaster mode from admin.
