You should investigate Webmaster Mode
It will make your life much easier. Have a look at the manual for detailed instructions on how to use it. All of the text is in the DB, but Webmaster Mode lets you edit it on the fly. Also, be sure to use the 'filter' box in the languages area. You can type part of the text you are looking to edit and it will filter the results to just show the variables that contain that text.
