Do you mean the background colour on the header ??

ie in head.tpl

change ...
<TABLE border="0" cellpadding="0" cellspacing="0" width="100%">

to ...
<TABLE bgcolor="#FF0000" border="0" cellpadding="0" cellspacing="0" width="100%">

= Red Background
