-Here is what I did. It is not exactly like what you are needing, but it is similar. I'll try to explain it using your steps.
step 1: A customer enters the website and clicks on a main category link.
step 2: On the category page, you see at the top a list of all of your subcategories. The customer clicks on a subcategory.
My Step 2: On the category page, you see at the top a list of all your subcategories
and then you scroll down and see a list of all your products within those subcategories. From there you can click on a subcategory. (or a product if you prefer)
step 3: when the subcategory page loads, the links for the sub categories are gone and you see only the products in that subcategory.
EXAMPLE: http://www.thecharmingbeadshop.com/home.php?cat=251
-The way I did it you get all of you get all of your subcategories to remain on the same page as the products in those subcategories. I know it's not exactly in the order you are looking for, but maybe it'll do until you can get what you want.
All that you have to do if you want to accomplish this is when you are adding a product also list the product in an Additional Category which would be the Main Cateogry that the product stems from.
