What you also could do is edit your language variable and delete this text.
But you could also comment it out in your template.
I'm not sure but it could be one of these files:
cart_totals.tpl
cart_contents.tpl
cart_details.tpl
checkout.tpl
First search for the label with that text and then search the label in one of those tpl files and comment it out.
