I'm looking to remove (for the time being) the Products/ Sort-by area noted in red arrows in the attached .gif
Anyone know what file(s) this Product sort by is located?

Use the webmaster mode to find the exact file. It could be subcategories.tpl or subcategories_list.tpl or subcategories_t.tpl depending on your settings and its location depends on the skin you are using
