Is there anyway to disable all products that are missing images?

Not in standard X-Cart - no... only way is to manually set a product to "not available".

I guess you could get someone to write a script thats checks if image is missing and auto sets products with missing image (or default photo not found image) to "not available" - but it isn't something that exists in standard x-cart.

No - it isn't (by "standard" x-cart, I meant pro or gold versions i.e. you need a mod done)
