Barcode Scanner?
 

Is there an add-on or software that will allow a client to use a barcode scanner to do inventory and then update the online database with the new inventory numbers? Maybe really use the sku field for a real sku from a barcode?

If you have "offline" inventory - i.e. classic store with physical products - it makes sense to use "offline" inventory system, then syncronize it with your online store. Key thing here is your business process setup.
After you select your offline inventory system - you will come to sync method, but not earlier.

Using your shopping cart as single inventory system is risky - mostly works for people who doesn't have "brick and mortar" stores - for egoods and different kinds of resellers
