Changing 'home' 'shopping cart' and 'contact us' labels
 

I've searched for the main Tab labels in the language editor but can't seem to locate them. Basically I just want control over the actual text, am I looking in the wrong place?

By tabs would you be referring to the Speed Bar at the top of the cart page?

If so, try "Speed Bar" submenu under "Administration" in the admin back-end.
