What template(s) are used for the:

View Cart
Personal Details
Shipping and Payment

I know that head_customer.tpl is used for the header, but what about the body. I would like to change it so that under Personal Details, the customer only sees the information needed to fill in for shipping and billing.

I don't want the customers signing up for an account here. They will have an option to register or login on the main page.

Open up your site in Webmaster Mode. it will tell you which template is which :)
